A delicious lunch-time treat! This is how all sandwiches should be – morish, tasty, and feel-good! I unfortunately don’t have any photo’s of this recipe as my camera’s battery died and I couldn’t put off tucking into this sandwich to recharge the battery. Next time I make it I’ll be sure to snap a few pics and upload them!
Serves 2.
Ingredients:
Fresh ciabatta bread, sliced
200g beef steak
Blue cheese
Avocado
Rocket leaves
Mayonnaise
Mustard
Heat a griddle pan until hot. Brush the meat with a little olive oil, season with salt and pepper and lay on the griddle pan. Cook for 2-3 minutes on each side, depending on the thickness of the meat and the way you like your meat to be done.
Remove the meat from the pan and slice into strips. Place 4 slices of ciabatta bread on the griddle pan and toast on each side. Remove from the pan and spread with a good layer of mayonnaise and mustard. Top with rocket, avocado, meat and some blue cheese. Season with salt and pepper.
If you don’t have a griddle pan, bake the bread and cook the meat under the grill of your oven.
