Internationally, the trend for cooking with South Africa’s famous fynbos export, rooibos tea, is growing. Rooibos can be used in both savoury and sweet recipes, adding its distinctive flavour to meat and puddings. Use rooibos stock in place of vegetable or chicken stock, smoke meat and fish with rooibos leaves, use tea bags to infuse milk and cream in desserts, or use it as a poaching liquid.

What better way to rediscover rooibos than making delicious drinks with a rooibos spin? This is far more decadent than the steaming pot of rooibos we know and love. For a non-alcoholic alternative, serve spiced rooibos iced tea or try these cocktails with some kick to accompany the rooibos savoury dishes.

Try to buy organic rooibos: it has a sweeter flavour (and it’s better for the environment).
