Another great vegetarian dish from Larissa Green’s organic vegetarian cooking course, this salad takes 10 minutes to make and is super healthy.
Serves 3 – 4
Ingredients
1 cup red quinoa (available at health shops)
5 – 6 carrots, grated
A handful of rocket, roughly chopped
Handful of seed mix (pumpkin, sunflower and linseed)
1 tablespoon apple cider vinegar
3 tablespoons olive oil
Method
Put the quinoa in a two cups of water in a saucepan, and cook on high heat for about 10 minutes, or until the ‘tails’ of the quinoa seeds are visible. Drain the water and add the grated carrot, rocket and seed mix to the quinoa. Mix well. Combine dressing ingredients – the vinegar, oil and a pinch of sea salt – and pour over the salad.
