Strawberry-mint summer smoothie

Smoothies are one of my absolute favourite things about warmer weather: berries and nectarines come back into season, and suddenly surviving by eating only mashed potatoes and gravy seems less appealing. Short of blitzing up a mix of sunscreen, white white and coconut oil (not recommended), this smoothie is the easiest way to get summer in a glass. Of course, there are no rules: substitute banana for yoghurt, leave out the mint, use strawberry jam instead of honey: whatever blows your hair back. My only advice is not to skimp on the strawberries: they’re not so expensive at the moment, and that vibrant colour is necessary for it to taste perfect.

Ingredients

– Half a punnet of strawberries (about 200 grams)

– 1 passionfruit

– 3 tablespoons of greek yoghurt

– Handful of mint

– Honey to taste  (the fruit is quite tart, so you might need more than you’d think: I ended up using about three tablespoons)

 

Method

You know how to do this. Just don’t blitz it into oblivion: the speckles are quite pretty.
