Padkos recipe: Vetkoek Posted by Michelle Parkin on 29 November 2012 Tags:padkos recipes, vetkoek, vetkoek recipe Makes 20 to 25 mini vetkoek Perfect mini vetkoek! (First put on this tune: Immigration Song by Led Zeppelin). Ingredients 1 cup self-raising flour 1 free-range egg 200 ml milk 3 ml salt 750 ml oil Cooking instructions In a medium bowl, combine the flour, egg, salt and milk and beat well until it forms a smooth, thick batter. Heat the oil in a pot over medium heat and deep-fry small dollops of vetkoek dough for three to four minutes or until golden brown and cooked through. (Two teaspoons of dough will be ample to create neat little vetkoek balls). Place on paper towel to drain excess oil. Serve the vetkoek with jam and cheese or curried mince.
