Ingredients
- 2 cups oats
- 1 cup desiccated coconut
- ¾ cup sugar
- 1 cup cake flour
- ½ teaspoon baking powder
- ½ teaspoon salt
- ½ cup butter
- 2 tablespoons syrup
Cooking instructions
Preheat the oven to 180° Celsius.
Combine the oats, coconut and sugar in a large bowl. Sift together the flour, salt and baking powder and stir into the oats mixture.
Melt the butter and syrup over a low heat and mix into the dry ingredients. Press down firmly into a prepared baking sheet and bake for eight to 12 minutes or until golden brown in colour. Cut the crunchies into squares while hot and leave to cool on a cooling rack.
For perfect roadtrip coffee:
Preheat your flask by rinsing it with boiling water – this will help it keep your coffee or tea warmer for longer. Make your tea or coffee as usual, but omit the sugar and milk and substitute it with a can of condensed milk for an extra-special cuppa.
