Ouma Grieta's milk tart

After much arm-twisting, I managed to get the recipe. Here it is for you to enjoy

You’ll need:
3 eggs
1 cup sugar
4 heaped tbsp cake flour
cup cold water
1 tsp vanilla essence
1 litre full cream milk
2 cinnamon sticks
15 ml butter
Puff pastry for the crust

Here’s how:
Separate the eggs and set the whites aside. Mix together the three egg yolks, water and half the sugar.

Boil the milk with the cinnamon sticks and butter. Pour half of the milk into the egg yolk mixture and whisk then add the remaining milk and flour and mix well.

Whisk the egg whites with the remaining sugar until soft peaks form then add the vanilla. Fold it into the rest of the mixture.

Layer the bottoms of two medium, round tart dishes with puff pastry and pour in the mixture. Bake at 180 degrees Celsius for 20 to 25 minutes.

Allow to cool and serve drizzled with cream and a good cup of coffee. Delicious!
