This is one of my favourite breakfasts of all time. It’s quick, easy and SO delicious. To be honest, it’s a fancy variety of peanut butter on toast!
You’ll need:
2 slices of good bread, toasted. Your choice but a robust, farm-style bread is ideal.
2 tsp macadamia nut butter (can be replaced with other nut-butters, available from most health shops)
2 tbsp plain, chunky cottage cheese
1 banana, sliced
tsp cinnamon
1 tsp honey
It’s as simple as this: Toast your bread until golden brown or as desired. Smear the macadamia nut butter on the toast while it’s still hot so it melts in. Don’t be shy! Spread the cottage cheese on top then arrange your banana slices. Dust with the cinnamon and drizzle with honey. Serve with a good cup of coffee – preferably in bed!
