You may think that panna cotta is too complicated for you to make at home. It’s actually a really easy dessert. This panna cotta is served with a delicious red wine and cherry syrup.

Serves 2

Ingredients

Panna cotta:

  • 1 cup cream
  • 25 g sugar
  • 1/2 tsp vanilla
  • 6.25 g (3 3/4) sheets of gelatine
  • 250 ml cold water

Red wine syrup:

  • 1/2 cup (125 ml) red wine
  • 3 Tbl (45 g) sugar
  • About 100 g cherries or strawberries

Method

For the panna cotta:

Heat the cream and sugar in a saucepan. Once the sugar has dissolved, remove the pan from the heat and stir in the vanilla. Lightly grease 2 custard cups or ramekins. Soften the gelatine sheets in the cold water for 5-10 minutes. Wring the sheets out and stir them into the warm cream mixture, until dissolved. Divide the mixture between the prepared cups or ramekins and chill until firm (at least 2 hours).

For the red wine syrup:

In a small pot, cook the red wine and sugar until the sugar dissolves and the bubbles get thick. Once the syrup has reduced to half its original quantity, remove from the heat and transfer to a bowl to cool. Rinse and slice the cherries or strawberries and toss into the syrup. Let stand for a couple of minutes and then spoon over the panna cotta.
