These bacon-wrapped chicken drumsticks are perfect padkos (road food) for your summer holiday road trip. Enjoy!

Ingredients
Makes 6
- 6 chicken drumsticks
- 200 g streaky bacon
- 2 tablespoons chopped fresh thyme
- Salt and pepper
Cooking instructions
Preheat the oven to 180° Celsius. Using a very sharp knife, score the drumstick just below the bulk. It takes a bit of elbow grease, but try to get all the meat, skin and cartilage off the bone so you’re left with a drumstick that resembles a lollipop.
Season the drumsticks with salt and pepper and a sprinkling of thyme and tightly wrap with the bacon. If you stretch the bacon enough it should stick together around the drumstick or you can secure it with a toothpick until it is cooked.
Place in an ovenproof dish and cover with foil. Cook for 20 minutes, then remove the foil and cook for another 10 minutes. To check if the chicken is cooked through, pierce the thickest part with a sharp knife or skewer; if the juices run clear the meat is cooked.
