The festive season is often accompanied by lots of eating – chocolates, decadent Christmas puddings and roast turkey are hard to to say no to, after all. To assuage your fears of a Christmas belly, why not also indulge in fresh, wholesome treats with inspiration from these foodie Instagrammers, whose salad, smoothie, and other healthy recipes look out of this world.

LA-based YouTuber and blogger Amanda creates plant-based meals, including cute sweet treats like heart-shaped flapjacks, chocolate vegan mini doughnuts and panda-shaped puff pastries. We think these fruit-filled summer rice-paper rolls (pictured above) look especially spectacular.

Di Bibby is based in Johannesburg and shares her recipes, including many South African favourites, on her blog bibbyskitchenat36.com. Di also teaches cooking classes for people wanting to enhance their culinary skills.

I’m loving all the entries so far. Ingredients Burger buns Beets Spinach Onions Avocado Coconut oil BBQ sauce Chickpea patties 1 cup of chickpeas ½ a cup of shredded carrots 2 tbsp of ground flax seeds 1 tsp of cumin 1 tsp of smoked paprika 1 tsp of turmeric powder 2 tbsp of nutritional yeast ½ a tsp of lime zest 3 garlic cloves A dash of black pepper A dash of pink salt Directions 1)Drain and rinse your chickpeas. 2)Dump your chickpeas into a food processor and pulse until blended well, but not too mushy. You can also use a potato masher. 3)Add your flax seed and seasonings and pulse (food processor) a few more seconds. Form your mash into patties and add them to a pan on medium heat. Cook patties with coconut oil until slightly brown. 4)Then add your layers however you want. Enjoy.
