This delicious, crunchy green salad goes really well with a nice home-made lasagne, a spaghetti bolognese or a classic pasta and home-made tomato sauce. It can also be enjoyed as a healthy light lunch.
Ingredients:
1 bag crispy salad leaves
½ a cucumber
1 avocado pear, peeled and stoned
About 100g mangetout/sugarsnap peas
Couple of handfuls of alfalfa
Wash, dry and tear your salad leaves. Cut your cucumber, avo and mangetout into chunky, bite-size pieces. Mix all ingredients together in a salad bowl and top with the alfalfa. Drizzle with olive oil and balsamic vinegar, or any other dressing of your choice. Season with salt and pepper and enjoy!
