Christmas time always makes me thing of my mom’s biscuits. Around this time of year, my brother, sister, mom and I would all help to make and decorate these easy-baking biscuits. Of course the main goal was to dig our sticky fingers into the raw batter and lick up all its sugary goodness. We would end up with sore tummies and less baked biscuits in the end, but the experience was what counted. Create some great memories with these festively spiced, easy to make biscuits; courtesy of my mom.
What you’ll need:
125g butter
125ml brown sugar
1 egg yolk
625ml cake flour
5ml bicarbonate of soda
5ml ground ginger
5ml cinnamon
5ml mixed spice
Juice and half the zest of one orange
Icing Sugar
1/2 cup icing sugar
1 tsp water
1/4 tsp vanilla essence
Half of the orange zest
Method:
Cream butter and sugar until smooth and beat in the egg yolk. Sift together dry ingredients and add to the creamed mixture along with the syrup. Stir well and knead on a floured surface to make a soft dough. Roll to a thickness of 5 – 7mm and cut into shapes with a cookie cutter (stars and Christmas trees work well). Place on a greased baking tray and, whilst licking the bowl and mixing the icing, leave them to bake at 180 degrees Celsius for about 10 minutes or until pale brown. Leave to cool completely before icing and decorating. Enjoy!
