This chicken pie is an old family favourite, which was passed on to my mother by an old family friend. It is very simple and easy to make and is always sure to please!
Ingredients
Pastry:
- 110g flour
- 2ml cream of tartar
- 110g butter
- 60ml water
- 2ml vinegar
Filling:
- 1 chicken, cooked and cubed
- 1 small tin of mushrooms
- 12,5ml parsley, chopped
- 55g ham, diced
- 1 hardboiled egg, chopped
- 55g butter
- 55g flour
- 500ml chicken stock
Cooking method
Sift the flour and cream of tartar together. Grate in the butter. Mix to an elastic dough with water and vinegar. Gather the dough into a ball, wrap in plastic and refrigerate until needed. When ready, roll out the dough to fit your desired pie dish.
Melt the butter, add the flour and cook gently. Add the stock and stir until it boils. Add the chicken, ham, parsley, egg and mushrooms. Turn the filling into a pie dish and cover with the pastry. Brush with egg to glaze. Bake at 210C for 30 minutes.
