A visit to a country village farmer’s market provided us with the fresh ingredients for a delicious and easy mediterranean-style meal. My friend Brandon whipped this up in minutes.
100g oyster mushrooms from the Riebeek West Funky Fresh Market
3 halves marinated red and yellow peppers from the Riebeek West Funky Fresh Market
3 cloves garlic, coarsely sliced
1 handful finely chopped parsley
1 red chilli, depipped and flash-fried
1 Tbsp olive oil
Splash of cider
Thinly slice the mushrooms and peppers. In a hot frying pan, heat the olive oil then flash fry the oyster mushrooms, parsley and garlic and peppers. After a couple of minutes, when it become a little dry, add a splash of cider.
Serve on the verandah with fresh, crusty ciabatta and lashings of extra olive oil.
